MALMO MAT:KAFFE is a new family run project coming to Liverpool in August 2017.
Nordic flags blow in the wind on Liverpool’s Swedish church, the Gustaf Adolfs Kyrka – a remaining link to our history with the old Baltic states. The Nordic sailors would have taken rest here as their imported timber was loaded into the warehouses that surround the church. You know the history, now meet the future. The city has recently become awash with the Scandinavian vibe – from Nordic-inspired pop-up dining clubs to Scandi-cool venues that put an IKEA catalogue to shame.
Based around rye-laden open sandwiches (smørrebrød), breakfast platters, colourful salads, fresh bagels & homemade crepes, Malmo aims to deliver a delicious Scandinavian inspired food & drink experience with a laid back and authentic café feel. It’s this mix of quality food and an intangible vibe that have made places like Copenhagen become European hot-spots.
We caught up with the family behind it to find out what the people of Liverpool can expect:
“Myself (Jessie) and Amy have put together a concept and menu that we think Liverpool will love! Having worked in the city for many years we have watched the food scene grow & grow, bringing so much diversity! However we felt there was a gap in the market for a unique menu, inspired by traditional Scandinavian dishes.
This is when we started experimenting with rye bread in our tiny office kitchen and discovered the wonderful world of smørrebrød (open sandwiches)! Smørrebrød can be as complex or simple as you like.. we layer ours with flavoursome roast vegetable spreads & purees, rich whipped blue cheese, honey glazed bacon, almond pesto, pickles & fruit compote (and many more) all made fresh in house! Our passion is not only working with distinctive flavours but also the ability to turn dishes into little works of art.”
Where will you be opening?
“The perfect spot came to us on Hanover St in the Merseyside Youth Association. We feel proud to host Malmo within such a lovely organisation!”
We’re drooling at the thought of it! What food can we expect?
“Since signing the contracts we have extended our menu to include breakfast platters, fresh bagels & salads. At the moment we are up to our ears taking inspiration from traditional Scandinavian dishes such as Risgrynsgröt (a sweet rice pudding), experimenting with pickling, making various infused oils as well as mastering the art of our new crepe machine. It’s a knack but we’re getting there. We are currently perfecting our menu and will be uploading it to our website soon so keep your eyes peeled!”
